I ported my phone number in but my old phone number shows up as a contact in the phone app.
I'm assuming it is in the sim card.
Is there anyway to edit a sim card?

It shows up in the Phone app as a contact but it is not selectable (it is greyed out).
Same SIM card or new SIM card? Which carrier was it previously used on and which is it currently used on? Does the new phone # work currently? Need more information. Did you contact your current cellular provider about this? Hard to say with any certainty without a better explanation.

I think Contacts are hardly ever stored on SIMs these days except for dumb phones maybe. I'd try deleting it through Google Contacts on a PC.
There are also apps specifically designed to migrate data off of SIMs into the phone built-ins / OS
