Every time I try to check out the service I am only given the option to use the ATT sim, any way to force the verizon sim? I want to do some testing

Sometimes the IMEI checker is wrong, and sometimes you have to call them or check with Verizon's IMEI checker. If Verizon's IMEI checker passes it, then it is something wrong with the Tracfone's IMEI checker

i just entered the IMEI of my unlocked moto G5s plus and was able to choose a verizon sim. select " i know the compatible carrier" " verizon compatible" enter the phones IMEI # it should say your device is compatible, select i need a sim card enter zip code, another screen will show asking if your device is currently active - select NO - select " i have a phone " then it should bring up the option to buy a verizon sim kit.

Did you try selecting NO where it asks if your
Phone is currently active ?? Also you might

It should get VoLTE. It seems like ever since Verizon's VoLTE only phone date which was July 1st of this year, people has been getting VoLTE by default.
